Happy Monday!

Man, the weekend sure did fly! Friday night we had a really relaxing evening at home- Blake picked up some tuna steaks from Bodeans (I love that place), and I made a really yummy sauce using soy sauce, ponzu sauce, sugar, wasabi, cooking sherry, butter, flour, and sesame seeds. Sounds kinda complicated, but it was one of those"a dash of this and a little bit more of that" and it was yummy!

Saturday we planned to clean the house a bit. It really needed it since we hadn't been in townfor about 3 weekends. We planned on cleaning until noon, but ended up cleaning until 4:30! Oh well, the house is very clean, and we had our newly married friends, Carrie and Chris, over to grill and play games. Church Sunday and picked up some stuff at the mall, got Blake some new scrubs, then lazed around. It was a great combination of getting things accomplished, spending time with friends and each other, and relaxing!

I'll be in Ada, Oklahoma from Tuesday till Thursday this week for training, then Jessica's Bachelorette party is this weekend in Columbia!

Today I love: my husband- our first date was 3 years ago today!

Hi Lori! Potato packets are super easy. You just take heavy duty aluminum foil and spray it w/ non-stick cooking spray. Thinly slice potatoes and place them on the foil. Add butter or olive oil, onions, garlic, and/or any other seasonings you like. Then wrap up the foil into packets and throw on the grill.

We also like to thinly slice zucchini and egg plant and throw on the grill.

Well, it will depend on how thinly you slice the potatoes. But, we usually throw the packets on the grill first, and then while our meat and other veggies are cooking they usually finish up.
